Holy Bacon Log Batman!

Speaking of bacon, a friend recently sent me a really amazing recipe for sweet and spicy bacon coated with Nutella. I know, pretty wild huh.

I can’t verify the yum or yuck factor yet–I’ll be sure to post the results however once I have them. But the whole idea really interested me, as I am a pretty renegade cook, and am always looking for the unusual or the unexpected in food combinations and meals. And this one definitely caught my eye.

It also reminded me of a holiday bacon log I once saw at some friends place a few years back. It was a log of bacon in a criss-crossed pattern rolled up, covered in more bacon, and then cooked! Here’s an idea of what I’m talking about. And there are hundreds of variations on this basic bacon log concept, all of which are equally amazing and gross.

As it turns out, there is a whole world of bacon log art and architecture, as well as culinary madness: everything from a smoked bac weave mac and cheese log to a bacon fortress! Needless to say, this is not for the faint at heart.

But while reading through this yummy heart attack vegetarian nightmare recipe, I also stumbled upon some lighter fare, a skillet baked egg brunch, which I will be trying very soon! Until then, here’s to the artery clogging meat madness that is Nutella covered sweet and spicy bacon!

Sweet & Spicy Bacon coated with Nutella and garnished with fleur del sel

What you’ll need:
1 tablespoon light brown sugar
1 teaspoon chili powder
1 teaspoon black pepper
6 pieces – thick sliced bacon
3 tablespoons Nutella
fleur de sel

What to do:
1.Preheat oven to 375 degrees. Into a small bowl mix: sugar, chili powder and black pepper. Set aside.

2. Spray a rimmed baking sheet with cooking spray. Arrange bacon sliced onto baking sheet making sure slices do not overlap. Bake for approximately 8 minutes. CAREFULLY flip bacon slices and sprinkle sugar/pepper mixture onto slices. Return to oven and bake for an additional 8 minutes.

3. Transfer bacon slices to a cooling rack and allow to cool completely.

4. When bacon has cooled, place Nutella into a small bowl and microwave for approximately 15-20 seconds to allow to soften. Transfer bacon slices to a piece of parchment paper that sits a top a plate. Using a silicon brush or icing spatula gently spread Nutella onto each bacon slice. Place plate into refrigerator and allow Nutella to coat/harden.

5. Once coating is firm to the touch sprinkle with fleur de sel.
